Ageing is the time the wine spends refining —almost always in barrel, sometimes also in bottle— before it leaves. It is not a prize. It is a judgement: some wines ask for it and some have no need.

Months, not miracles

In Jumilla you will see 4 months, 12 months, sometimes more. Four months polish without covering the fruit. Twelve give cocoa, spice, a rounder tannin. Beyond that, the wine must have the matter not to dry out.
