Yeasts turn the sugar of the must into alcohol and CO₂.
Without alcoholic fermentation there is no wine: there is must. Sugar becomes ethanol; the gas leaves. Temperature and vat change the profile.
It is the first great cellar gesture. The rest —wood, time— comes after.
